Description Asiazyme AA is food grade ¦Á-Amylase, originated from Aspergillus oryzal var using fermentation and extraction method, it is mainly used in the production of high malt syrup, beer, bakery and etc. Working Mechanism The alpha-amylase is an endo-amylase. It hydrolyze the alpha-1-4-glucosidic linkage in amylase and amylopectin, producing many maltoses and little maltotriose, glucse and other oligosaccharides. Application Guide In the maltose syrup processing, alpha amylase mainly used in slurry with maltose content<54%. In the beer industry , it can increase the fermentation degree, improve the residual sugar level and avoid cold muddy( chill haze ) in saccharification and fermentation stage. The product can be applied in bakery to improve dough properties and fermentation performance, increase bread volume, better crumb texture and reduce weight loss. |
